(7oz) pack feta
1½ tbsp extra virgin olive oil
chopped fresh dill
chopped mint
Zest of ¼ orange
Put half a 200g (7oz) pack feta into a bowl (trying not to break it) and pour over 1½tbsp extra virgin olive oil. Next, scatter over 1tbsp each chopped fresh dill and mint and the zest of ¼ orange. Season, cover and leave to marinate for 1hr, if you have time. Serve with some crusty bread and the Grated Beetroot Salad.
